Astaxanthin is a keto carotenoid, red solid powder, fat soluble, insoluble in water, soluble in organic solvents. It is widely found in shrimp, crabs, fish, birds, some algae and fungi. Natural astaxanthin is a strong antioxidant carotenoid, with anti-oxidation, anti-aging, anti-tumor, prevention of cardiovascular and cerebrovascular diseases, the international has been used in health food, high-grade cosmetics, drugs and other fields.
At present, the production of astaxanthin mainly consists of chemical synthesis and natural extraction. The chemically synthesized astaxanthin is not only expensive, but also significantly different from natural astaxanthin in terms of molecular structure, biological function, application effect and biosafety performance, which makes the extraction of natural astaxanthin gradually occupy a dominant position. The accumulation of astaxanthin in Haematococcus pluvialis can reach up to 4% of the cell dry weight, the accumulation rate and total production are higher than other green algae, and it is currently recognized as the best biological source for the production of natural astaxanthin.
Astaxanthin can be divided into left-handed (3S,3's), right-handed (3R,3' R) and racemic (3S,3' R) compounds based on 3,3' carbon optical activity. Compounds with different optical rotation properties have different physiological activities, among which left-handed astaxanthin has the best absorption effect and the strongest biological activity. At present, the production of astaxanthin is mainly artificial synthesis and biological extraction. The composition of optically active isomers of astaxanthin from different sources is very different. Among them, the composition of artificial astaxanthin is left-handed: racemic: right-handed = 1:2:1, fermentation products are mainly right-handed, and astaxanthin in Haematococcus pluvialis is left-handed, which is basically consistent with the optical rotation structure of astaxanthin in wild aquatic animals. Among the three sources, Haematococcus pluvialis astaxanthin has the best absorption effect and the strongest biological activity.
Function and application of Astaxanthin:
1. Antioxidant. The important properties of astaxanthin are its antioxidant properties, and it is an excellent antioxidant. It is also known as "super Vitamin E".
